The project kicks off with spaghetti, directly from Massimo Mancini. A streak of gratitude flashes through Massimo’s eyes as he utters the word ‘family’: indeed, Pasta Mancini embodies a journey back to one’s roots, the closing of a circle. Back in 1938, his forward-looking grandfather, Mariano, decided it was time to drive his threshes with a tractor. That same far-sightedness drove Massimo to open his pasta factory together with Ernesto Paoletti, an architect and close friend. They had ten hectares of land at their disposal to turn their hopes into reality, and a single aim: transforming Mancini wheat into the best possible pasta. Nowadays the wheat field in Monte San Pietrangeli yields family-produced products that are regarded among the best in the world. Emanuele Fabi and Massimo Mancini chose spaghetti to celebrate a friendship, two families, our anniversary and Fabi’s new idea. We are the first company to have the privilege of fully customising a portion of the highly elegant pack, a worthy component of the product it contains.
